The Story
Walnut trees in Kashmir are often older than the families who care for them. Every autumn the nuts are shaken down, dried in the sun, cracked by hand and sorted kernel by kernel. We pick light-coloured kernels with a mild, buttery taste, because fresh walnuts should never taste bitter. Kashmir grows most of India's walnuts, and these come straight from the valley to you.

Quality Check
What every batch has to pass before it is packed.
Hand-sorted
Every lot is sorted by hand — broken, shrivelled and discoloured pieces are picked out.
Size & grade
Pieces are graded by size so each pack is uniform, not topped up with smaller or lower-grade pieces.
Freshness test
We smell and taste a sample from every batch; anything stale or rancid is rejected, not blended in.
Moisture check
Lots that feel damp or overly dry are set aside, since moisture is what leads to fungus and a soft bite.
Foreign matter removed
Stones, shell fragments, stems and dust are cleaned out before anything goes near a pouch.
Final look before sealing
Each pack gets one last visual check at the packing table before it is sealed.
