The Story
Fresh buffalo milk is boiled and set into dahi overnight. In the morning, the dahi is churned in a wooden bilona until white makkhan rises to the top. This makkhan is slow-cooked over a gentle flame in small batches until it turns golden and forms its danedar grain. It takes far more milk and time than cream ghee, and you can taste the difference in the very first spoon.
